  • One onion diced
  • 28 oz crushed tomatoes cans
  • 28 ounces black beans cans, drained
  • One carrot shredded
  • One bell pepper diced
  • One jalapeno seed and veins removed and minced
  • Two minced garlic cloves
  • 1 1/2 cups pumpkin puree
  • 1 cup vegetable broth low-sodium
  • Two tablespoons chili powder
  • One teaspoon pumpkin pie spice
  • One teaspoon kosher salt
  • 1/2 teaspoon black pepper


  • Combine all ingredients in a slow cooker. Stir to combine. Cook on low for 5-6 hours or high for 2-3 hours. Serve with Greek yogurt, avocado slices, or a dollop of Greek Yogurt.
